Festivals often mean a full house and a busy kitchen. Choose dishes that can be kept warm or served at room temperature for a short time, and assign one person to keep an eye on refilling and food safety while you cook.

Outdoor and summer events

In hot weather, perishable food spoils faster. Serve yogurt-based dishes in small batches straight from a cooler, keep drinks on ice, and limit the time anything perishable spends outside to 1 hour when it's above 32°C (90°F).

Hosting on a budget

Potatoes, puffed rice, corn, cabbage and gram flour are inexpensive and go a long way. A spread built around bhel, vada pav, corn cups and pav bhaji can feed a large group economically.
